Description

A refreshing and vibrant Zesty Fresh Citrus Salad featuring mixed greens, juicy oranges, grapefruit, kiwi, and creamy avocado, all brought together with a sweet and tangy honey-orange vinaigrette infused with fresh mint. Perfect for a light lunch or as a bright side dish.

Ingredients

Scale

Salad

  • 4 cups of mixed salad greens
  • 2 large oranges, peeled and segmented
  • 1 medium grapefruit, peeled and segmented
  • 2 kiwifruits, peeled and sliced
  • 1 avocado, sliced
  • 1/4 cup of red onion, thinly sliced

Honey-Orange Vinaigrette

  • 1 tablespoon of honey
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh mint leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the greens: Wash the mixed salad greens thoroughly under cold water to remove any dirt or grit, then dry them well using a salad spinner or clean kitchen towel to ensure crispness.
  2. Segment the citrus: Cut off the top and bottom of the oranges and grapefruit to create flat surfaces. Using a sharp knife, slice down the sides to remove the peel and pith. Carefully cut between the membranes to release the individual citrus segments, removing any seeds.
  3. Assemble the salad: In a large salad bowl, combine the dried mixed greens, citrus segments, sliced kiwifruits, sliced avocado, and thinly sliced red onion. Gently toss to mix the ingredients evenly without bruising the fruit.
  4. Make the vinaigrette: In a small bowl, whisk together the honey, olive oil, chopped fresh mint, salt, and freshly ground black pepper until the mixture is well combined and smooth.
  5. Toss and serve: Just before serving, drizzle the honey-orange vinaigrette over the salad. Toss lightly to coat all ingredients evenly. Serve immediately to enjoy the fresh flavors and textures at their best.

Notes

  • For best results, use ripe but firm citrus and kiwi fruits to avoid sogginess.
  • Adjust the amount of honey in the vinaigrette based on your preferred level of sweetness.
  • You can substitute fresh mint with basil or cilantro for a different flavor profile.
  • Serve immediately after dressing to prevent the avocado from browning.
  • This salad pairs well with grilled chicken or fish for a complete meal.
