Ingredients
Scale
Salad
- 4 cups of mixed salad greens
- 2 large oranges, peeled and segmented
- 1 medium grapefruit, peeled and segmented
- 2 kiwifruits, peeled and sliced
- 1 avocado, sliced
- 1/4 cup of red onion, thinly sliced
Honey-Orange Vinaigrette
- 1 tablespoon of honey
- 2 tablespoons of olive oil
- 2 tablespoons of fresh mint leaves, chopped
- Salt and pepper to taste
Instructions
- Prepare the greens: Wash the mixed salad greens thoroughly under cold water to remove any dirt or grit, then dry them well using a salad spinner or clean kitchen towel to ensure crispness.
- Segment the citrus: Cut off the top and bottom of the oranges and grapefruit to create flat surfaces. Using a sharp knife, slice down the sides to remove the peel and pith. Carefully cut between the membranes to release the individual citrus segments, removing any seeds.
- Assemble the salad: In a large salad bowl, combine the dried mixed greens, citrus segments, sliced kiwifruits, sliced avocado, and thinly sliced red onion. Gently toss to mix the ingredients evenly without bruising the fruit.
- Make the vinaigrette: In a small bowl, whisk together the honey, olive oil, chopped fresh mint, salt, and freshly ground black pepper until the mixture is well combined and smooth.
- Toss and serve: Just before serving, drizzle the honey-orange vinaigrette over the salad. Toss lightly to coat all ingredients evenly. Serve immediately to enjoy the fresh flavors and textures at their best.
Notes
- For best results, use ripe but firm citrus and kiwi fruits to avoid sogginess.
- Adjust the amount of honey in the vinaigrette based on your preferred level of sweetness.
- You can substitute fresh mint with basil or cilantro for a different flavor profile.
- Serve immediately after dressing to prevent the avocado from browning.
- This salad pairs well with grilled chicken or fish for a complete meal.
