- Prepare the dressing: In a mason jar, combine the lime juice, extra virgin olive oil, honey, and a pinch of salt. Secure the lid tightly and shake vigorously until the ingredients are well emulsified and the honey is fully incorporated.
- Combine salad ingredients: In a large mixing bowl, add the cubed watermelon, fresh blueberries, thinly sliced mint and basil leaves, and about ¾ cup of the crumbled feta cheese. These ingredients provide a balanced mix of sweetness, tang, and fresh herbaceous flavor.
- Toss with dressing: Drizzle the prepared lime and honey dressing over the salad mixture. Gently toss all ingredients together carefully to coat the fruit and herbs evenly without bruising the watermelon cubes.
- Garnish and serve: Transfer the salad to a serving dish or leave it in the bowl. Sprinkle the remaining ¼ cup of crumbled feta cheese on top along with additional fresh mint or basil if desired. Serve immediately to enjoy the fresh flavors and crisp texture.
