Description

A refreshing and vibrant Watermelon Feta Salad combining sweet watermelon, juicy blueberries, tangy feta cheese, and aromatic herbs, dressed with a zesty lime and honey dressing. Perfect for a light summer dish or a healthy side salad.

Ingredients

Scale

Fruits

  • 7 to 8 cups seedless watermelon, cubed
  • 1 ½ cups fresh blueberries

Cheese

  • 1 cup crumbled feta cheese

Herbs

  • Fresh mint leaves, thinly sliced (quantity to taste)
  • Fresh basil leaves, thinly sliced (quantity to taste)

Dressing

  • Juice of 1 ½ limes
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons honey, to taste
  • A pinch of salt

Instructions

  1. Prepare the dressing: In a mason jar, combine the lime juice, extra virgin olive oil, honey, and a pinch of salt. Secure the lid tightly and shake vigorously until the ingredients are well emulsified and the honey is fully incorporated.
  2. Combine salad ingredients: In a large mixing bowl, add the cubed watermelon, fresh blueberries, thinly sliced mint and basil leaves, and about ¾ cup of the crumbled feta cheese. These ingredients provide a balanced mix of sweetness, tang, and fresh herbaceous flavor.
  3. Toss with dressing: Drizzle the prepared lime and honey dressing over the salad mixture. Gently toss all ingredients together carefully to coat the fruit and herbs evenly without bruising the watermelon cubes.
  4. Garnish and serve: Transfer the salad to a serving dish or leave it in the bowl. Sprinkle the remaining ¼ cup of crumbled feta cheese on top along with additional fresh mint or basil if desired. Serve immediately to enjoy the fresh flavors and crisp texture.

Notes

  • Adjust honey amount based on desired sweetness.
  • Serve immediately to prevent watermelon from becoming soggy.
  • For added crunch, sprinkle toasted pine nuts or walnuts.
  • This salad pairs well with grilled meats or as a light standalone dish.
  • Use cold watermelon for best refreshing taste.
