Ingredients
Scale
Cookie Dough
- 1 box (13.25 ounces) chocolate cake mix
- 2 large eggs
- â…“ cup vegetable oil
Frosting
- ½ cup (1 stick) unsalted butter
- 2 tablespoons cocoa powder
- 3 tablespoons milk, plus extra as needed
- 1 teaspoon vanilla extract
- 2½ cups powdered sugar
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper or a silicone baking mat to prevent cookies from sticking.
- Make Cookie Dough: In a large mixing bowl, combine the chocolate cake mix, eggs, and vegetable oil. Stir until a thick, sticky dough forms with no dry spots.
- Form Cookies: Using a cookie scoop or spoon, drop rounded balls of dough onto the prepared baking sheet about 2 inches apart to allow space for spreading during baking.
- Bake Cookies: Bake for 8 to 10 minutes until the edges look set but centers are slightly soft. Avoid overbaking as cookies will firm up during cooling.
- Prepare Frosting: While cookies bake, melt butter in a medium saucepan over medium heat. Whisk in cocoa powder and milk until smooth, then remove from heat.
- Add Vanilla & Sugar: Stir in vanilla extract and powdered sugar; whisk until frosting is smooth and glossy. Adjust consistency with extra milk or powdered sugar as needed.
- Frost Cookies: After removing cookies from oven, let cool on the baking sheet for 2-3 minutes. While warm, spoon about 1 tablespoon of warm frosting on each cookie and gently spread toward edges.
- Cool & Set: Transfer frosted cookies to a wire rack to cool completely, allowing the frosting to set and harden slightly before serving.
Notes
- Do not overbake the cookies to maintain their soft, cake-like texture.
- Use room temperature eggs for best dough consistency.
- Adjust frosting thickness by adding milk or powdered sugar incrementally.
- Cookies can be stored in an airtight container at room temperature for up to 3 days.
- For a dairy-free version, substitute butter with dairy-free margarine and use a non-dairy milk alternative.
