Instructions

  1. Slice sweet potatoes. Cut the sweet potato into ¼-inch to ⅓-inch slices using a sharp knife or mandoline to ensure even slices, important for even cooking and to maintain their shape.
  2. Preheat oven. Set your oven or toaster oven to 450ºF to prepare for toasting the sweet potato slices.
  3. Prepare baking sheet. Arrange the sweet potato slices on a nonstick baking sheet and lightly spray or drizzle with avocado oil to prevent sticking.
  4. Oil the slices. Drizzle 1 tablespoon of avocado oil evenly over the sweet potato slices for enhanced flavor and crispiness.
  5. Toast sweet potato slices. Bake for 15 to 20 minutes, flipping the slices halfway through, until tender and lightly browned. Remove from oven and let them cool slightly to handle.
  6. Cook eggs. Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Crack in the eggs and season with salt and pepper. Cook until egg whites are set but yolks remain runny, approximately 2 to 2½ minutes, then remove from heat.
