Sweet Potato Toast

Instructions
- Slice sweet potatoes. Cut the sweet potato into ¼-inch to ⅓-inch slices using a sharp knife or mandoline to ensure even slices, important for even cooking and to maintain their shape.
- Preheat oven. Set your oven or toaster oven to 450ºF to prepare for toasting the sweet potato slices.
- Prepare baking sheet. Arrange the sweet potato slices on a nonstick baking sheet and lightly spray or drizzle with avocado oil to prevent sticking.
- Oil the slices. Drizzle 1 tablespoon of avocado oil evenly over the sweet potato slices for enhanced flavor and crispiness.
- Toast sweet potato slices. Bake for 15 to 20 minutes, flipping the slices halfway through, until tender and lightly browned. Remove from oven and let them cool slightly to handle.
- Cook eggs. Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Crack in the eggs and season with salt and pepper. Cook until egg whites are set but yolks remain runny, approximately 2 to 2½ minutes, then remove from heat.
- Assemble the toast. Spread mashed avocado on each sweet potato slice.
