Sweet Potato Base

Toppings

  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 fresh jalapeño, thinly sliced
  • ½ cup diced tomatoes

To Serve

  • ½ cup sour cream or Greek yogurt
  • Fresh cilantro, for garnish


Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Sweet Potatoes: Slice the sweet potatoes into thin rounds, about 1/4 inch thick. Toss the slices with 2 tablespoons of extra virgin olive oil, and season with salt and pepper. Arrange them in a single layer on the prepared baking sheet to ensure even cooking.
  3. Bake Sweet Potatoes: Bake the sweet potato slices for 20-25 minutes, flipping halfway through to ensure they become golden brown and crispy on both sides.
  4. Add Toppings: Remove the crispy sweet potato rounds from the oven and layer 1 cup of shredded cheddar cheese evenly over them. Then sprinkle rinsed black beans, thinly sliced jalapeños, and diced tomatoes on top of the cheese.
  5. Melt Cheese: Return the baking sheet to the oven for an additional 5-7 minutes, or until the cheese is fully melted and bubbly, melding all the flavors together.
