Scale
Sweet Potato Base
- 2 medium sweet potatoes (about 500g)
- 2 tablespoons extra virgin olive oil
- Salt and pepper, to taste
Toppings
- 1 cup shredded cheddar cheese
- 1 can (15 oz) black beans, rinsed and drained
- 1 fresh jalapeño, thinly sliced
- ½ cup diced tomatoes
To Serve
- ½ cup sour cream or Greek yogurt
- Fresh cilantro, for garnish
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Prepare Sweet Potatoes: Slice the sweet potatoes into thin rounds, about 1/4 inch thick. Toss the slices with 2 tablespoons of extra virgin olive oil, and season with salt and pepper. Arrange them in a single layer on the prepared baking sheet to ensure even cooking.
- Bake Sweet Potatoes: Bake the sweet potato slices for 20-25 minutes, flipping halfway through to ensure they become golden brown and crispy on both sides.
- Add Toppings: Remove the crispy sweet potato rounds from the oven and layer 1 cup of shredded cheddar cheese evenly over them. Then sprinkle rinsed black beans, thinly sliced jalapeños, and diced tomatoes on top of the cheese.
- Melt Cheese: Return the baking sheet to the oven for an additional 5-7 minutes, or until the cheese is fully melted and bubbly, melding all the flavors together.
- Serve and Garnish: Serve your sweet potato nachos immediately, adding dollops of sour cream or Greek yogurt on the side and garnishing with fresh cilantro for a burst of color and fresh flavor.
Notes
- For extra crispiness, you can soak the sweet potato slices in cold water for 30 minutes before baking and then pat them dry thoroughly.
- Adjust the amount of jalapeño based on how spicy you like your nachos.
- Greek yogurt is a healthier alternative to sour cream and adds a nice tang to the dish.
- These nachos can be made vegan by substituting cheddar cheese with a plant-based cheese alternative and using vegan yogurt as a topping.
- Leftovers can be refrigerated and reheated in the oven to maintain crispness.
