Description

These Sweet Lemon-Blueberry Frozen Yogurt Bites are a refreshing and healthy treat, combining tangy Greek yogurt with the natural sweetness of blueberries and a hint of lemon zest. Perfect for a cool snack or dessert, these bites are easy to make and packed with fresh fruit flavor and a subtle touch of cardamom for extra warmth.

Ingredients

Scale

Frozen Yogurt Mixture

  • 1 cup Fage 5% Greek yogurt
  • 2 tbsp vanilla extract
  • 2 1/2 tsp lemon zest
  • 1/8 tsp cardamom
  • 1/8 tsp salt
  • 1 tbsp honey
  • 1/2 cup freeze-dried blueberries, crushed into a fine powder

Fresh Fruit

  • 2 cups fresh blueberries (preferably Driscoll’s for consistent size and sweetness)

Instructions

  1. Prepare Blueberry Powder: Crush the freeze-dried blueberries into a fine powder using a mortar and pestle or blender, ensuring a smooth texture to blend well with the yogurt.
  2. Mix Yogurt Base: In a mixing bowl, combine the Greek yogurt, vanilla extract, lemon zest, cardamom, salt, honey, and the crushed freeze-dried blueberry powder. Stir thoroughly until all ingredients are evenly incorporated, creating a smooth, flavorful yogurt mixture.
  3. Add Fresh Blueberries: Gently fold the fresh blueberries into the yogurt mixture, distributing them evenly without breaking the berries.
  4. Portion Mixture: Using a small spoon or mini muffin scoop, spoon the yogurt and blueberry mixture into silicone molds or a lined mini muffin tin, filling each cavity.
  5. Freeze: Place the molds or tin in the freezer and freeze the bites for at least 2 hours, or until completely firm and frozen.
  6. Serve: Once frozen, pop the yogurt bites out of the molds and serve immediately for a cool, delicious snack. Store any leftovers in an airtight container in the freezer.

Notes

  • Use full-fat Greek yogurt for the best texture and creaminess; low-fat options may result in icier bites.
  • Freeze-dried blueberries provide concentrated flavor without excess moisture; do not substitute with fresh blueberries here.
  • Silicone molds or mini muffin tins lined with parchment paper work best to easily remove frozen bites.
  • These bites can be stored in the freezer for up to 2 weeks.
  • Add a little lemon juice if you prefer a tangier flavor profile.
  • For a vegan version, substitute yogurt and honey with plant-based yogurt and maple syrup.
