Scale
For the Pancake Batter
- 1/4 cup cottage cheese (4% milkfat)
- 1 large egg
- 2 tablespoons all-purpose flour (or 2 1/2 tablespoons gluten free all-purpose flour)
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
For Cooking and Serving
- 1/2 tablespoon butter (for frying)
- Butter and maple syrup (for serving)
Instructions
- Make Batter: Add the cottage cheese, egg, flour, baking powder, and salt into a blender in that order. Blend the mixture until it becomes smooth and lump-free to form the pancake batter.
- Melt Butter: Preheat a nonstick pan over medium-high heat for about a minute. Add 1/2 tablespoon of butter and let it melt completely, coating the surface of the pan evenly.
- Cook Pancake: Pour the prepared batter into the heated pan to form one large pancake. Cook for 1 to 2 minutes until bubbles form on the surface and the bottom turns golden brown.
- Flip and Finish: Carefully flip the pancake and cook for an additional 1 to 2 minutes until the other side is golden and the pancake is cooked through.
- Serve: Remove the pancake from the pan and serve immediately with your choice of butter and maple syrup or any other preferred toppings.
Notes

- This recipe makes one large, single-serving pancake perfect for a quick breakfast.
