Description

Ranch Garlic Parmesan Chicken is a flavorful and easy-to-make dish featuring juicy chicken skewers marinated in ranch dressing, garlic, and Italian herbs, then topped with melted Parmesan cheese. Perfect for grilling or baking, this recipe offers a delicious cheesy finish and optional vegetable additions for a complete meal.

Ingredients

Scale

For the Chicken Skewers:

  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup ranch dressing
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (optional)
  • Salt and pepper, to taste
  • Skewers (wooden or metal; if wooden, soak in water for 30 minutes before grilling)

Optional Vegetables:

  • Bell peppers, cut into chunks
  • Cherry tomatoes
  • Red onion, cut into wedges

Instructions

  1. Prepare the Marinade: In a large bowl, combine ranch dressing, olive oil, minced garlic, dried Italian herbs, salt, and pepper. Mix thoroughly to blend all the flavors.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring each piece is well coated. For best flavor, refrigerate and marinate for 30 minutes if time permits.
  3. Preheat Grill or Oven: For grilling, preheat the grill to medium-high heat. For baking, preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Assemble the Skewers: Thread the marinated chicken pieces onto the skewers, alternating with the optional bell peppers, cherry tomatoes, and red onion chunks if using. Leave space between pieces for even cooking.
  5. Cook the Skewers: Grill the skewers for 10-15 minutes, turning occasionally, until cooked through and internal temperature reaches 165°F (75°C). Or bake the skewers on the baking sheet for 15-20 minutes until cooked through and slightly golden.
  6. Add Parmesan Cheese: In the last few minutes of cooking, sprinkle grated Parmesan cheese over the skewers. Close the grill lid to melt the cheese or switch the oven to broil for 2-3 minutes to achieve a golden crust.

Notes

  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • Marinating the chicken longer enhances flavor and tenderness.
  • Use a meat thermometer to ensure chicken is safely cooked to 165°F (75°C).
  • Optional vegetables add color and nutrition but can be omitted if preferred.
  • If broiling, watch carefully to avoid burning the cheese topping.
