Description

  • 16 ounces mini marshmallows (10 cups, divided)

Cereals:

  • 4 cups Rice Krispies cereal
  • 2 cups Fruity Pebbles cereal


Instructions

  1. Prepare the Pan: Spray an 8×8-inch (or 9×9-inch) pan generously with non-stick spray and line it with foil or parchment with a bit of overhang. Spray the lining again to ensure the treats won’t stick.
  2. Melt Butter and Marshmallows: In a large, heavy pot over medium heat, melt the butter. Reserve 2 cups of marshmallows for later, and add the remaining marshmallows along with the salt to the pot. Stir continuously with a silicone spatula until the marshmallows are almost completely melted but not fully bubbling, about 4 minutes.
  3. Add Flavor and Cereals: Stir in the vanilla extract or paste and then turn off the heat. Immediately add both the Rice Krispies and Fruity Pebbles cereals, along with the reserved 2 cups of marshmallows. Stir thoroughly until the mixture is completely combined and sticky.
  4. Transfer and Set: Quickly transfer the cereal mixture to the prepared pan. Gently press it down with a silicone spatula or use an empty butter wrapper to flatten the top evenly without pressing too hard, which will make the treats dense instead of light and gooey.
  5. Cool and Serve: Allow the treats to cool completely to room temperature before lifting them out using the foil overhang. Cut into sixteen 2-inch squares and serve.
