Description

This Parmesan Crusted Chicken Sheet Pan Dinner is a simple and delicious one-pan meal featuring tender chicken breasts coated in a crispy parmesan and breadcrumb crust, roasted alongside golden red potatoes and fresh green beans. Perfect for a quick weeknight dinner, this recipe combines savory flavors with easy cleanup.

Ingredients

Scale

Chicken

  • 1½ lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • â…“ cup grated parmesan
  • â…“ cup breadcrumbs (Italian or plain, 1 tsp Italian seasoning if plain)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt

Potatoes

  • 2 lb red potatoes, cut into bite sized pieces (quartered if small, cut into 6ths or 8ths if larger)
  • 1-2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F to ensure it’s hot enough to roast the potatoes and bake the chicken to perfection.
  2. Prepare and Roast Potatoes: Line a sheet pan with parchment paper or spray it with cooking oil for easy cleanup. In a medium bowl, toss the red potatoes with minced garlic, olive oil, parmesan, salt, and pepper until evenly coated. Spread the potatoes evenly on one-third of the sheet pan and bake for 10-15 minutes until they begin to soften and brown.
  3. Coat and Add Chicken: While the potatoes roast, in the same bowl, toss the chicken breasts with olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and sea salt until fully coated. After the potatoes have cooked, remove the sheet pan from the oven and place the chicken breasts on the empty two-thirds of the pan.
  4. Prepare Green Beans and Add to Pan: In a bowl, toss the trimmed green beans with olive oil, minced garlic, optional parmesan, salt, and pepper. Add the green beans to the sheet pan alongside the potatoes and chicken.
  5. Bake Until Done: Return the sheet pan to the oven and bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F and the vegetables are tender. For extra crispy potatoes, optionally broil on high for 4-5 minutes at the end.
  6. Rest and Serve: Remove the pan from the oven and let it rest for a few minutes before serving to allow the juices to settle. Enjoy your flavorful and easy Parmesan Crusted Chicken Sheet Pan Dinner!

Notes

  • Using parchment paper helps with easy cleanup and prevents sticking.
  • You can substitute Italian seasoning for plain breadcrumbs for more flavor.
  • Adjust the amount of garlic according to your preference.
  • Ensure chicken reaches an internal temperature of 165°F for food safety.
  • Broiling the potatoes at the end adds extra crispiness but watch closely to avoid burning.
  • If potatoes are large, cutting them smaller will reduce roast time.
