Description

A quick and flavorful pan-seared shrimp dish featuring crunchy roasted peanuts and a zesty lime dressing, garnished with fresh cilantro. Ready in just 20 minutes, this recipe delivers a perfect balance of textures and bright citrus notes, ideal for a healthy and satisfying meal.

Ingredients

Scale

Shrimp and Seasoning

  • 500 grams (1 lb) fresh shrimp, peeled and deveined
  • Salt, to taste
  • 1 tablespoon black pepper, freshly ground (divided)

Peanut Lime Sauce

  • 100 grams (3.5 oz) roasted peanuts, roughly chopped
  • 2 tablespoons lime juice, freshly squeezed
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Prepare the Shrimp: Rinse the fresh shrimp under cold water and pat them dry thoroughly with paper towels. Season the shrimp evenly with salt and half of the freshly ground black pepper to infuse flavor before cooking.
  2. Make the Lime Pepper Mixture: In a small bowl, combine the freshly squeezed lime juice with the remaining black pepper. Set this mixture aside to be added later, allowing the flavors to meld.
  3. Heat the Skillet and Sauté Garlic: Place a large skillet over medium-high heat and add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Cook the Shrimp: Add the seasoned shrimp to the skillet in a single layer. Cook for 2-3 minutes without moving them, allowing a golden crust to form on one side. Flip the shrimp and cook for another 2-3 minutes until they turn opaque and are cooked through.
  5. Add Peanuts and Lime Mixture: Stir in the roughly chopped roasted peanuts, cooking for an additional minute to toast them lightly and incorporate their flavor. Drizzle the lime and pepper mixture over the shrimp and peanuts, gently tossing everything to coat evenly.
  6. Serve: Transfer the shrimp mixture to a serving platter. Garnish generously with the chopped fresh cilantro and serve immediately to enjoy the contrasting textures and bright citrus notes.

Notes

  • Ensure the shrimp are thoroughly dried before seasoning to achieve a proper sear.
  • Use fresh lime juice for the best flavor impact.
  • Roasted peanuts add a lovely texture and nuttiness, but you can substitute with cashews if preferred.
  • Adjust black pepper amount according to your spice tolerance.
  • Serve as a main dish or alongside steamed rice or a fresh salad for a complete meal.
