Ingredients
Scale
Chicken and Sauce
- 2 chicken breasts, diced
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup honey
- 2 tbsp soy sauce
- 1/2 tsp crushed red pepper flakes (optional)
Noodles and Broth
- 2 cups chicken broth
- 8 oz egg noodles
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
- Cook the Chicken: Heat olive oil in a large pot over medium heat. Add the diced chicken breasts and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste.
- Add Garlic & Sauce Ingredients: Stir in minced garlic and cook for another minute until fragrant. Then add honey, soy sauce, and crushed red pepper flakes if using. Mix well to combine the flavors.
- Simmer with Noodles: Pour in the chicken broth and bring the mixture to a simmer. Stir in the egg noodles, cover the pot, and cook for 8-10 minutes, stirring occasionally until the noodles are tender and the sauce has thickened.
- Final Seasoning & Serve: Taste and adjust seasoning with additional salt and pepper if needed. Garnish with chopped fresh parsley for a burst of color and freshness. Serve hot and enjoy this comforting one-pot meal.
Notes
- You can substitute chicken thighs for breasts for a juicier texture.
- Adjust the crushed red pepper flakes to your preferred spice level or omit for no heat.
- If the sauce is too thick, add a little more chicken broth to loosen it up.
- For a gluten-free version, use gluten-free soy sauce and noodles.
- This recipe refrigerates well and can be reheated for leftovers.
