Ingredients
Scale
Rice and Beans
- 1 cup long-grain white rice
- 1 can black beans (or soaked dried black beans)
- 1 leaf bay leaf
Vegetables and Seasonings
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin (adjust to taste)
- 1 medium bell pepper, diced
- 1 tbsp fresh lime juice
- 1 cup corn (fresh or frozen)
- Water (to cook rice and beans; approximately 2 cups)
- Oil (for sautéing, about 1-2 tbsp)
Instructions
- Prepare Beans: If using dried black beans, soak them in water overnight. Rinse and drain thoroughly before cooking to ensure they soften perfectly.
- Sauté Vegetables: In a large pot, heat a splash of oil over medium heat. Add finely chopped onions and minced garlic, sautéing until the onions are translucent and fragrant, about 3-5 minutes.
- Combine Ingredients: Add the soaked black beans (or canned beans drained), long-grain white rice, diced bell pepper, corn, cumin, bay leaf, and enough water to the pot. Stir well to combine all ingredients evenly.
- Cook: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and simmer gently for 20-25 minutes, or until the rice has absorbed the liquid and is fully cooked.
- Rest: Turn off the heat and allow the dish to sit covered for an additional 5 minutes. This resting step helps the flavors to meld and the rice to finish steaming.
- Finish and Serve: Remove the bay leaf. Stir in fresh lime juice, fluff the rice and beans with a fork, then serve warm as a hearty, authentic Cuban comfort dish.
Notes
- For best texture, rinse the rice before cooking to remove excess starch.
- If using canned black beans, rinse and drain to reduce sodium.
- Adjust cumin quantity according to your preferred spice level.
- Feel free to garnish with fresh cilantro for added flavor.
- This dish pairs wonderfully with Cuban-style roasted meats or fried plantains.
