Ingredients
Scale
Protein & Veggies
- 1 tablespoon Olive oil
- 24 ounces Chicken breast (cubed)
- 1 teaspoon Salt
- 12 ounces Broccoli florets (cut into bite-sized pieces)
- 12 ounces Bacon (cooked and chopped into small pieces)
Cheese & Seasoning
- 5 ounces Cheddar cheese (shredded)
- 2 ounces Mozzarella cheese (shredded)
- 8 ounces Cream cheese (softened)
- 2 tablespoons Ranch seasoning
Instructions
- Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add the cubed chicken and salt, cooking for approximately 10 minutes or until the chicken is fully cooked through. Remove from heat and set aside.
- Steam the Broccoli: Place broccoli florets in a microwave-safe bowl with 1 cup of water. Cover with a damp paper towel and microwave on high for about 3 minutes until fork-tender but not overcooked. Drain and pat dry with a paper towel, then set aside.
- Prepare the Cream Cheese Mixture: In a bowl, combine the softened cream cheese with the ranch seasoning, mixing until smooth and well blended.
- Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking the casserole.
- Assemble the First Layer: In a casserole dish, spread half of the steamed broccoli and half of the cooked chicken evenly on the bottom. Use a ½ teaspoon measuring spoon to distribute half of the ranch cream cheese mixture over the broccoli and chicken.
- Add Cheese and Bacon: Sprinkle half of the shredded cheddar cheese, mozzarella cheese, and chopped bacon evenly over the first layer.
- Assemble the Second Layer: Repeat the layering with the remaining broccoli, chicken, cream cheese mixture, cheddar, mozzarella, and finish with the remaining bacon on top.
- Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes or until the cheese is fully melted and bubbly.
- Serve: Remove from the oven, let it rest slightly, then serve warm for a comforting keto meal.
Notes
- Steaming the broccoli briefly ensures it remains tender-crisp and avoids sogginess in the casserole.
- To save time, you can cook the bacon ahead of time and store it in the fridge until ready to use.
- For extra flavor, add a pinch of garlic powder or onion powder to the ranch cream cheese mixture.
- Let the casserole rest for 5 minutes after baking to allow it to set, making it easier to portion.
- To make this recipe dairy-free, substitute cheeses and cream cheese with keto-friendly dairy-free alternatives.
