Ingredients
Scale
Peach Mixture
- 2 cups chopped ripe, juicy peaches
- 1/2 cup dark brown sugar
- 1 teaspoon cinnamon (optional)
- 4 tablespoons salted butter, melted
- 2 teaspoons vanilla extract
Muffin Batter
- 3 eggs at room temperature
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
Topping
- 1 cup caramel sauce (for drizzling)
Instructions
- Preheat and prepare pans: Preheat your oven to 425°F (220°C). Line two muffin tins with paper liners to prevent sticking and make removal easy.
- Make peach filling: In a bowl, combine the chopped peaches, dark brown sugar, cinnamon (if using), melted butter, and vanilla extract. Stir until well mixed. Spoon about two teaspoons of this mixture into each muffin cup as a base layer.
- Prepare muffin batter: In a separate bowl, whisk together the 3 room-temperature eggs until light. Add flour, baking powder, and salt to the eggs. Gently fold these dry ingredients into the wet mixture until just combined, taking care not to overmix. Then, fold in the remaining peach mixture into the batter.
- Fill muffin tins: Pour the muffin batter evenly into the prepared tins over the initial peach layer. Add a spoonful of the remaining peach mixture on top of each muffin and gently swirl it into the batter for a marbled effect.
- Bake muffins: Bake the muffins at 425°F (220°C) for 8 minutes to allow an initial rise. Then, reduce the oven temperature to 350°F (175°C) and continue baking for an additional 20-30 minutes until the muffins are golden brown and a toothpick inserted in the center comes out clean.
- Cool and serve: Let the muffins cool in the tins for 5 minutes. Remove from tins and drizzle with caramel sauce while warm or at room temperature for the best flavor experience. Enjoy!
Notes
- Use ripe, juicy peaches for the best flavor and texture.
- You can omit cinnamon if you prefer a more straightforward peach flavor.
- Ensure eggs are at room temperature to help create a lighter muffin texture.
- Do not overmix the batter to avoid dense muffins.
- The caramel sauce can be warmed slightly for easier drizzling.
- Leftover muffins can be stored in an airtight container for up to 3 days or frozen for longer storage.
