Description

This Italian chicken recipe features juicy, seared chicken breasts topped with vibrant basil pesto and sweet roasted grape tomatoes. The combination of fresh herbs, garlic, and olive oil creates a flavorful and elegant dish perfect for an easy weeknight dinner or special occasion.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Basil Pesto

  • 1 cup fresh basil pesto (store-bought or homemade)

Tomatoes and Aromatics

  • 1 pint (about 2 cups or 300 g) grape tomatoes
  • 3 cloves garlic, minced
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Season Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper to enhance flavor and help achieve a nice sear.
  2. Prepare Pesto (if making homemade): Blend fresh basil leaves, garlic, pine nuts, Parmesan cheese, and olive oil in a food processor until smooth and set aside. If using store-bought pesto, go to the next step.
  3. Sear Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for 5-7 minutes on each side until they develop a golden-brown crust.
  4. Sauté Garlic and Tomatoes: Remove the chicken from the skillet and set aside. In the same skillet, sauté the minced garlic for about 30 seconds until fragrant. Add the grape tomatoes and cook for 3-4 minutes until they start to soften and release juices.
  5. Bake with Pesto: Return the seared chicken breasts to the skillet. Spoon a generous amount of basil pesto over each chicken breast. Transfer the skillet to a preheated oven and bake for 10-15 minutes, until the chicken is cooked through and the pesto is warmed.
  6. Garnish and Serve: Remove from the oven, garnish with fresh basil leaves if desired, and serve hot with the roasted grape tomatoes.

Notes

  • For homemade basil pesto, use equal parts fresh basil, Parmesan cheese, olive oil, pine nuts, and garlic for best results.
  • Make sure your skillet is oven-safe before placing it in the oven for baking.
  • If chicken breasts are thick, consider pounding them to an even thickness for more even cooking.
  • Serve with a side of crusty bread or over pasta for a complete Italian-inspired meal.
