- 1 pint (about 2 cups or 300 g) grape tomatoes
- 3 cloves garlic, minced
- Fresh basil leaves for garnish (optional)
Instructions
- Season Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper to enhance flavor and help achieve a nice sear.
- Prepare Pesto (if making homemade): Blend fresh basil leaves, garlic, pine nuts, Parmesan cheese, and olive oil in a food processor until smooth and set aside. If using store-bought pesto, go to the next step.
- Sear Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for 5-7 minutes on each side until they develop a golden-brown crust.
- Sauté Garlic and Tomatoes: Remove the chicken from the skillet and set aside. In the same skillet, sauté the minced garlic for about 30 seconds until fragrant. Add the grape tomatoes and cook for 3-4 minutes until they start to soften and release juices.
- Bake with Pesto: Return the seared chicken breasts to the skillet. Spoon a generous amount of basil pesto over each chicken breast. Transfer the skillet to a preheated oven and bake for 10-15 minutes, until the chicken is cooked through and the pesto is warmed.
- Garnish and Serve: Remove from the oven, garnish with fresh basil leaves if desired, and serve hot with the roasted grape tomatoes.
