Description

This Irresistible Mango Pie is a luscious vegan dessert combining a naturally sweet, crunchy crust with a creamy, tropical mango filling. Perfect for a refreshing treat, it uses wholesome ingredients like dates, cashews, and fresh mango to create a dairy-free, no-bake pie that’s both healthy and indulgent.

Ingredients

Scale

For the Crust:

  • 1 1/2 cups rolled oats or almond flour
  • 1 cup dates, pitted and soaked
  • 1/4 cup shredded coconut or chopped nuts
  • Pinch of salt

For the Filling:

  • 2 cups fresh or frozen mango chunks (thawed if frozen)
  • 1 cup raw cashews (soaked for 4 hours or overnight)
  • 1/2 cup full-fat coconut milk or cream
  • 1/4 cup maple syrup or agave
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla extract
  • Optional: 1 tablespoon coconut oil for added creaminess

Instructions

  1. Make the Crust: In a food processor, blend the soaked dates, rolled oats (or almond flour), shredded coconut, and a pinch of salt until the mixture is sticky and holds together when pressed. Firmly press this mixture into the bottom of a tart pan or springform pan. Place the crust in the freezer to chill while you prepare the filling.
  2. Soften the Mango (optional): If you’re using frozen mango chunks, ensure they are completely thawed and slightly warmed to aid smooth blending. For enhanced flavor, simmer the mango in a saucepan for 5 minutes to intensify its natural sweetness, then let it cool slightly before blending.
  3. Prepare the Filling: In a blender, combine the soaked cashews, mango chunks, coconut milk or cream, maple syrup or agave, lime juice, and vanilla extract. Blend on high speed until the mixture is completely smooth and creamy. For an even silkier texture, optionally add a tablespoon of coconut oil and blend again.
  4. Assemble and Chill: Pour the creamy mango filling over the chilled crust, spreading evenly with a spatula. Refrigerate the assembled pie for 4 to 6 hours to allow it to set firmly, or alternatively, freeze it for 1 to 2 hours for a quicker firm set.
  5. Slice and Serve: Once the pie is firm, carefully remove it from the pan. Garnish with mango slices, coconut flakes, or fresh mint leaves as desired before slicing and serving chilled for the best taste experience.

Notes

  • Soaking cashews overnight ensures an ultra-smooth and creamy filling texture.
  • Using soaked dates naturally sweetens the crust without added sugars.
  • Feel free to substitute rolled oats with almond flour to keep the crust gluten-free.
  • If coconut oil is not preferred, it can be omitted without impacting the overall creaminess too much.
  • For a firmer pie, freezing is a good alternative to chilling in the refrigerator.
