Indulge in the refreshing twist of classic brownies with this delectable Irish Mint Brownies recipe. Featuring a rich dark chocolate brownie base topped with a creamy, minty frosting and a decorative dark chocolate drizzle, these brownies are perfect for St. Patrick’s Day or any time you crave a mint-chocolate delight. Moist, fudgy, and bursting with mint flavor, these brownies combine comforting textures with vibrant color for a festive treat.

Ingredients

Scale

Brownie Base

  • 1/2 cup unsalted butter
  • 6 ounces baking dark chocolate
  • 1 1/4 cups white granulated sugar
  • 1 cup all-purpose flour
  • 2 large eggs

Mint Frosting

  • 2 1/2 cups powdered sugar (or more, to desired sweetness)
  • 4 ounces cream cheese (softened to room temperature)
  • 4 tablespoons unsalted butter (softened to room temperature)
  • 1/2 teaspoon peppermint extract
  • Gel mint green food coloring (a few drops)

Chocolate Drizzle

  • 2 ounces dark baking chocolate (melted, for drizzle)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready when your batter is mixed.
  2. Prepare Pan: Line an 8-inch square baking pan with aluminum foil, letting the foil extend over two opposite edges for easy removal. Grease the foil lightly with butter or baking spray to prevent sticking.
  3. Melt Chocolate and Butter: In a medium saucepan over medium heat, melt 1/2 cup unsalted butter and 6 ounces of dark baking chocolate, stirring constantly until the mixture is smooth and well combined.
  4. Make Batter: Remove the saucepan from heat and stir in the sugar, eggs, and flour until fully incorporated into a smooth batter.
  5. Bake Brownies: Spread the batter evenly into the prepared pan. Bake in the preheated oven for 25 to 30 minutes, or until the edges start pulling away from the pan and a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely before adding the topping.
  6. Prepare Mint Frosting: In a large bowl, beat together powdered sugar, softened cream cheese, softened butter, peppermint extract, and gel green food coloring at medium speed until the frosting is smooth and creamy.
  7. Frost Brownies: Spread the mint frosting evenly over the cooled brownies, making sure to cover the entire surface.
  8. Add Chocolate Drizzle: Melt 2 ounces of dark baking chocolate and drizzle it artistically over the frosted brownies for an elegant finish.
  9. Chill and Serve: Place the brownies in the refrigerator for a few hours to allow the frosting to set completely. Once chilled, lift the brownies out using the foil handles, cut into 9 bars, and serve.

Notes

  • Make sure the brownies are completely cooled before frosting to prevent the frosting from melting.
  • You can adjust the amount of peppermint extract depending on your preferred intensity of mint flavor.
  • If needed, add extra powdered sugar to the frosting to achieve your desired consistency and sweetness.
  • For easy removal, allow the foil to overhang the pan edges and use this to lift the brownies out after chilling.
  • Store leftover brownies in an airtight container in the refrigerator for up to 5 days for best freshness.
