Ingredients
Scale
Brownie Base
- 1/2 cup unsalted butter
- 6 ounces baking dark chocolate
- 1 1/4 cups white granulated sugar
- 1 cup all-purpose flour
- 2 large eggs
Mint Frosting
- 2 1/2 cups powdered sugar (or more, to desired sweetness)
- 4 ounces cream cheese (softened to room temperature)
- 4 tablespoons unsalted butter (softened to room temperature)
- 1/2 teaspoon peppermint extract
- Gel mint green food coloring (a few drops)
Chocolate Drizzle
- 2 ounces dark baking chocolate (melted, for drizzle)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready when your batter is mixed.
- Prepare Pan: Line an 8-inch square baking pan with aluminum foil, letting the foil extend over two opposite edges for easy removal. Grease the foil lightly with butter or baking spray to prevent sticking.
- Melt Chocolate and Butter: In a medium saucepan over medium heat, melt 1/2 cup unsalted butter and 6 ounces of dark baking chocolate, stirring constantly until the mixture is smooth and well combined.
- Make Batter: Remove the saucepan from heat and stir in the sugar, eggs, and flour until fully incorporated into a smooth batter.
- Bake Brownies: Spread the batter evenly into the prepared pan. Bake in the preheated oven for 25 to 30 minutes, or until the edges start pulling away from the pan and a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely before adding the topping.
- Prepare Mint Frosting: In a large bowl, beat together powdered sugar, softened cream cheese, softened butter, peppermint extract, and gel green food coloring at medium speed until the frosting is smooth and creamy.
- Frost Brownies: Spread the mint frosting evenly over the cooled brownies, making sure to cover the entire surface.
- Add Chocolate Drizzle: Melt 2 ounces of dark baking chocolate and drizzle it artistically over the frosted brownies for an elegant finish.
- Chill and Serve: Place the brownies in the refrigerator for a few hours to allow the frosting to set completely. Once chilled, lift the brownies out using the foil handles, cut into 9 bars, and serve.
Notes
- Make sure the brownies are completely cooled before frosting to prevent the frosting from melting.
- You can adjust the amount of peppermint extract depending on your preferred intensity of mint flavor.
- If needed, add extra powdered sugar to the frosting to achieve your desired consistency and sweetness.
- For easy removal, allow the foil to overhang the pan edges and use this to lift the brownies out after chilling.
- Store leftover brownies in an airtight container in the refrigerator for up to 5 days for best freshness.
