Chocolate Coating

  • 1/2 cup dark chocolate chips (or sugar-free chocolate chips)
  • 1 tablespoon coconut oil (for chocolate coating)


Instructions

  1. Make the filling mixture: In a medium-sized bowl, combine the powdered monk fruit sweetener (or powdered sugar), coconut flour, melted coconut oil, peppermint extract, and almond milk. Stir everything together until a thick, dough-like consistency forms.
  2. Form patties: Scoop out about one tablespoon of the mixture and roll it into a ball, then flatten it into a disc shape. Repeat with the remaining mixture to make all the patties.
  3. Freeze the patties: Place the discs on a parchment-lined baking sheet and put them in the freezer for at least 30 minutes so they can firm up and become easy to handle for dipping.
  4. Melt the chocolate coating: While the patties freeze, melt the dark chocolate chips and 1 tablespoon coconut oil together. Use a double boiler method by placing a heatproof bowl over simmering water, stirring until smooth, or melt in the microwave in 30-second intervals, stirring thoroughly between each.
  5. Dip the patties in chocolate: Remove the patties from the freezer one at a time and dip each fully into the melted chocolate, making sure to coat evenly. Place each coated patty back on the parchment paper to set.
  6. Set the chocolate: Freeze the chocolate-coated patties for another 15-20 minutes to harden the chocolate coating completely.
