Chocolate Coating
- 1/2 cup dark chocolate chips (or sugar-free chocolate chips)
- 1 tablespoon coconut oil (for chocolate coating)
Instructions
- Make the filling mixture: In a medium-sized bowl, combine the powdered monk fruit sweetener (or powdered sugar), coconut flour, melted coconut oil, peppermint extract, and almond milk. Stir everything together until a thick, dough-like consistency forms.
- Form patties: Scoop out about one tablespoon of the mixture and roll it into a ball, then flatten it into a disc shape. Repeat with the remaining mixture to make all the patties.
- Freeze the patties: Place the discs on a parchment-lined baking sheet and put them in the freezer for at least 30 minutes so they can firm up and become easy to handle for dipping.
- Melt the chocolate coating: While the patties freeze, melt the dark chocolate chips and 1 tablespoon coconut oil together. Use a double boiler method by placing a heatproof bowl over simmering water, stirring until smooth, or melt in the microwave in 30-second intervals, stirring thoroughly between each.
- Dip the patties in chocolate: Remove the patties from the freezer one at a time and dip each fully into the melted chocolate, making sure to coat evenly. Place each coated patty back on the parchment paper to set.
- Set the chocolate: Freeze the chocolate-coated patties for another 15-20 minutes to harden the chocolate coating completely.
- Serve or store: Enjoy your homemade peppermint patties immediately as a refreshing treat, or store them in an airtight container in the refrigerator for up to one week.
