  • 2 tablespoons golden syrup
  • 1/2 teaspoon baking soda
  • 2 tablespoons boiling water


Instructions

  1. Preheat Oven: Preheat your oven to 160°C (320°F) and line baking trays with parchment paper to prepare for baking.
  2. Combine Dry Ingredients: In a large bowl, thoroughly mix the rolled oats, desiccated coconut, plain flour, and brown sugar until well incorporated.
  3. Melt Butter and Syrup: Place unsalted butter and golden syrup in a saucepan over low heat. Stir gently until both are completely melted and joined in a smooth mixture.
  4. Activate Baking Soda: In a small bowl, stir baking soda into the boiling water. This will cause the mixture to foam slightly. Quickly add this to the melted butter and golden syrup mixture and stir to combine well.
  5. Combine Wet and Dry Mixtures: Pour the wet ingredient mixture into the bowl of dry ingredients, stirring until all components are evenly combined into a dough-like consistency.
  6. Form Cookies: Using a tablespoon, scoop portions of the dough and roll into balls. Place these on the prepared baking trays with enough space in between, then flatten each ball slightly with your fingers or a spoon.
