Ingredients
Scale
Potatoes
- 1.5 pounds baby potatoes
Seasoning
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon dried rosemary or thyme
- 1/2 teaspoon paprika
Garnish (optional)
- 2 tablespoons chopped fresh parsley
- Grated parmesan cheese
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat to ensure the potatoes cook evenly and do not stick.
- Prepare the Potatoes: Wash and scrub the baby potatoes thoroughly to remove any dirt, then pat them completely dry. Cut each potato in half to ensure even roasting and crispiness.
- Season the Potatoes: Place the halved potatoes in a mixing bowl. Add olive oil, minced garlic, sea salt, freshly ground black pepper, dried rosemary or thyme, and paprika. Toss the mixture well to coat all potato pieces evenly with the seasoning.
- Arrange for Roasting: Spread the seasoned potatoes cut-side down on the prepared baking sheet in a single layer. Make sure not to overcrowd the pan to allow proper air circulation for maximum crispness.
- Roast the Potatoes: Roast the potatoes in the preheated oven for 30–35 minutes. Flip them halfway through cooking to ensure they become golden and crisp on all sides while remaining tender on the inside.
- Garnish and Serve: Once roasted, garnish the potatoes with chopped fresh parsley and sprinkle grated parmesan cheese over them if desired. Serve immediately while hot.
Notes
- Ensure the potatoes are completely dry before seasoning to achieve crispiness in the oven.
- Cutting the potatoes in half promotes even cooking and more surface area for crispiness.
- You can substitute dried rosemary with dried thyme depending on your preference.
- For a dairy-free version, omit the grated parmesan cheese.
- These roasted potatoes pair well with grilled meats, roasted chicken, or as part of a vegetarian meal.
