Description

A simple and delicious Chicken with Creamy Tomato Sauce recipe that features tender seared chicken breasts smothered in a rich and silky tomato cream sauce infused with garlic, Italian seasoning, and Parmesan cheese. This comforting dish can be prepared in just 30 minutes and is perfect for a quick weeknight dinner for two.

Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

Sauce

  • 3 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup heavy cream
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, optional for garnish

Instructions

  1. Prepare the Chicken: Season the chicken breasts evenly with salt, pepper, and 1 tsp Italian seasoning. Heat 2 tbsp olive oil in a skillet over medium heat. Sear the chicken on each side for about 5-7 minutes until golden brown and fully cooked through. Remove from pan and keep warm.
  2. Create the Tomato Base: In the same skillet, add more olive oil if needed. Sauté the minced garlic for about 30 seconds until fragrant but not browned. Pour in the crushed tomatoes, add a pinch of salt and 1 tsp Italian seasoning, then simmer for 5-6 minutes to slightly reduce and intensify the flavors.
  3. Make It Creamy: Lower the heat and slowly stir in the heavy cream, mixing continuously until fully combined with the tomato sauce. Let the sauce simmer gently for 3-5 minutes until it thickens and becomes silky. Adjust seasoning with salt, pepper, or additional herbs as desired.
  4. Combine and Finish: Return the cooked chicken breasts to the skillet with the creamy tomato sauce, spooning sauce over them to coat well. Warm together for 2-3 minutes to allow flavors to meld. Sprinkle grated Parmesan cheese and fresh basil leaves over the top before serving.

Notes

  • Use boneless, skinless chicken breasts for even cooking and tender texture.
  • Adjust the amount of heavy cream for a lighter or richer sauce as preferred.
  • Fresh basil leaves add a nice herbal aroma but are optional.
  • Serve with pasta, rice, or crusty bread to soak up the creamy sauce.
  • Leftovers can be refrigerated for up to 2 days and reheated gently to avoid curdling the sauce.
