Instructions
- Prepare the meatball mixture: In a large bowl, combine the ground turkey, finely chopped spinach, egg, breadcrumbs, grated Parmesan cheese, minced garlic, onion powder, salt, and black pepper. Mix gently until just combined to avoid tough meatballs.
- Form and brown the meatballs: Shape the mixture into 1½-inch meatballs. Heat olive oil in a large skillet over medium heat, then add the meatballs. Cook them, turning occasionally, until browned on all sides, about 6 to 8 minutes.
- Make the creamy sauce: Remove the browned meatballs from the skillet and set aside. In the same skillet, add the chicken broth, heavy cream, Dijon mustard, dried thyme, and grated Parmesan cheese. Stir well and bring the mixture to a gentle simmer.
