Ingredients
Scale
Chicken and Sauce
- 1.5 lbs boneless, skinless chicken breasts
- 10 oz can cream of chicken soup
- 10 oz can cream of mushroom soup
- 1 cup chicken broth
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon crushed red pepper flakes (optional)
Pasta and Cheese
- 8 oz uncooked spaghetti, broken in half
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
Garnish
- Chopped parsley for garnish
Instructions
- Prepare the chicken and sauce mixture: Place the chicken breasts at the bottom of the crockpot. In a medium bowl, whisk together the cream of chicken soup, cream of mushroom soup, chicken broth, sour cream, garlic powder, onion powder, salt, black pepper, paprika, and crushed red pepper flakes if using. Pour this mixture evenly over the chicken.
- Cook the chicken: Cover the crockpot and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is fully cooked and tender.
- Shred the chicken: Remove the cooked chicken from the crockpot and shred it thoroughly using two forks. Return the shredded chicken to the crockpot and stir to combine with the sauce.
- Add pasta and cheddar cheese: Stir in the uncooked broken spaghetti and shredded cheddar cheese into the crockpot. Cover again and cook on high for 20 to 30 minutes, stirring once or twice during this time, until the pasta is tender and creamy.
- Finish and garnish: Sprinkle the grated Parmesan cheese over the dish and let it sit covered for 5 minutes. Garnish with chopped parsley before serving for a fresh, vibrant touch.
Notes
- Use rotisserie chicken as a shortcut by adding it when you stir in the pasta to save cooking time.
- Swap cheddar cheese with Monterey Jack or a cheese blend for a creamier finish.
- Add steamed broccoli or peas when mixing in the pasta for added veggies and color.
