Description

This creamy chicken and spinach casserole combines tender shredded chicken, fresh spinach, and a blend of cheeses for a warm and comforting dish. With its rich texture and savory flavors, it’s perfect for a hearty family meal that comes together quickly and bakes to bubbly perfection.

Ingredients

Scale

Chicken and Vegetables

  • 4 chicken breasts, cooked and shredded
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced

Dairy and Cheese

  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Others

  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Sauté garlic: Heat olive oil in a skillet over medium heat, then add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Cook spinach: Add chopped spinach to the skillet and cook until it wilts, about 2 to 3 minutes, then remove the skillet from the heat.
  4. Mix cheeses and seasonings: In a large bowl, combine softened cream cheese, sour cream, shredded mozzarella, grated Parmesan, salt, and pepper. Stir until smooth and creamy.
  5. Add chicken and spinach: Fold in the shredded cooked chicken and the wilted spinach mixture, mixing thoroughly to combine all ingredients evenly.
  6. Prepare baking dish: Grease an 8×8 or 9×9-inch baking dish, then spread the chicken and cheese mixture evenly inside.
  7. Bake the casserole: Place the dish in the preheated oven and bake for 20 to 25 minutes until the casserole is heated through and bubbly on top.
  8. Serve and enjoy: Once baked, serve the casserole hot alongside rice, bread, or pasta for a complete meal.

Notes

  • For extra flavor, sprinkle some crushed red pepper flakes or paprika on top before baking.
  • You can substitute fresh spinach with frozen, but be sure to thaw and drain excess water.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Adding a crunchy breadcrumb topping before baking can add a nice texture contrast.
