- 3 cups tri-color coleslaw mix

Instructions
- Sauté Vegetables: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add 3 cups tri-color coleslaw mix and sauté for 3 to 4 minutes until the vegetables are just tender but still crisp.
- Add Chicken: Stir in 2 cups shredded cooked chicken and cook for another 2 to 3 minutes to warm through. Season with salt and pepper to taste. Remove the skillet from heat and let the mixture cool slightly to make handling easier.
- Prepare Wrappers: Place one egg roll wrapper on a flat surface positioned like a diamond. Spoon about 1/4 to 1/3 cup of the cooled chicken and vegetable mixture horizontally across the center of the wrapper.
- Roll and Seal: Fold in the two side edges of the wrapper over the filling and then tightly roll from the bottom corner upward. Moisten the top corner with water to seal the egg roll securely, preventing it from opening during frying.
- Heat Oil for Frying: Pour vegetable oil into a skillet to about 3/4 inch deep and heat it to 175–190°C (350–375°F). Use a thermometer if available to ensure the correct temperature for frying.
- Fry Egg Rolls: Carefully place egg rolls into the hot oil in batches, making sure not to overcrowd the pan. Fry them while turning frequently for even cooking and golden brown color on all sides, usually about 3 to 5 minutes per batch.
- Drain and Serve: Remove fried egg rolls with a slotted spoon and place on paper towels to drain excess oil. Serve hot with your favorite dipping sauces such as sweet chili or soy sauce for a delicious appetizer or snack.
