Description

A flavorful and hearty Chicken and Sweet Potato Skillet recipe featuring tender chicken cubes seared to perfection alongside caramelized sweet potatoes, infused with smoked paprika and herbs for a simple yet delicious one-pan meal.

Ingredients

Scale

Chicken Marinade

  • 2 large boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Sweet Potatoes

  • 2 large sweet potatoes, peeled and diced into 3/4-inch cubes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Finishing Touches

  • 1 tablespoon butter (optional)
  • Fresh parsley or thyme, chopped, for garnish

Instructions

  1. Marinate the Chicken: Toss the chicken cubes with 1 tablespoon olive oil, garlic powder, smoked paprika, onion powder, dried thyme, salt, and pepper in a bowl. Let the mixture sit for 5 to 10 minutes to allow the flavors to meld.
  2. Cook the Sweet Potatoes: Heat 1 tablespoon olive oil in a cast-iron skillet over medium heat. Add the diced sweet potatoes in a single layer, season lightly with salt and pepper, and cook for 10 to 12 minutes, stirring occasionally, until they are caramelized and tender. Remove the sweet potatoes from the skillet and set them aside.
  3. Sear the Chicken: In the same skillet, add the marinated chicken cubes in a single layer. Cook for 5 to 7 minutes, turning occasionally, until the chicken is golden brown on all sides and cooked through, reaching an internal temperature of 165°F (74°C).
  4. Combine and Finish Cooking: Return the cooked sweet potatoes to the skillet with the chicken. Mix gently to combine. If desired, add 1 tablespoon of butter and cook for an additional 2 to 3 minutes to blend the flavors and melt the butter.
  5. Garnish and Serve: Sprinkle chopped fresh parsley or thyme over the skillet mixture. Serve hot and enjoy your wholesome meal.

Notes

  • Use a cast-iron skillet for best caramelization and even cooking.
  • You can substitute dried thyme with fresh thyme if available, adding it at the end to preserve flavor.
  • Adjust seasoning according to taste preferences.
  • Optional butter adds richness but can be omitted for a lighter dish.
  • Internal temperature for cooked chicken should reach 165°F for safe consumption.
