Chicken and Broth

  • 1.5 pounds boneless, skinless chicken thighs
  • 6 cups low-sodium chicken broth

Dumplings

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

  • 3/4 cup whole milk

Instructions

  1. Brown the chicken: In a large pot over medium heat, heat olive oil. Season the chicken thighs with salt and pepper, then brown them in the pot for about five minutes until golden on both sides. Remove the chicken and set aside.
  2. Sauté vegetables: In the same pot, add the sliced carrots and chopped celery. Cook for about three minutes until the vegetables are softened and fragrant.
  3. Add broth and simmer chicken: Pour the low-sodium chicken broth into the pot and return the browned chicken thighs to it. Bring the mixture to a simmer over medium heat.
