Description

This Cheesy Buffalo Chicken Lasagna with Ranch Drizzle combines spicy buffalo chicken with creamy cheeses layered between tender noodles, baked to bubbly perfection and finished with a cool ranch drizzle and fresh green onions. A flavorful twist on classic lasagna that’s perfect for comfort food lovers looking for a little kick.

Ingredients

Scale

Chicken Mixture

  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Cheese and Noodles

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

Toppings

  • 1/2 cup ranch dressing
  • 1/2 cup green onions, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the lasagna.
  2. Cook Noodles: Cook lasagna noodles according to the package instructions until al dente, then drain and set aside to cool slightly.
  3. Sauté Garlic and Chicken: Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Stir in the shredded chicken and buffalo sauce, mixing thoroughly and cooking for 2-3 minutes to combine flavors. Season with salt and pepper as desired.
  4. Assemble Lasagna: In a baking dish, spread a thin layer of ricotta cheese on the bottom. Layer with lasagna noodles, followed by the buffalo chicken mixture, then sprinkle mozzarella and Parmesan cheese. Repeat these layers until all ingredients are used, finishing with cheese on top.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes to allow the flavors to meld and the cheese to melt.
  6. Add Ranch Drizzle: Remove the foil from the dish and drizzle ranch dressing evenly over the top. Return the lasagna to the oven and bake uncovered for an additional 5 minutes to warm the ranch and crisp the cheese slightly.
  7. Garnish and Serve: Remove the lasagna from the oven and garnish with chopped green onions. Slice and serve warm for a deliciously spicy and cheesy meal.

Notes

  • Use freshly cooked chicken or leftover rotisserie chicken for convenience.
  • Adjust the amount of buffalo sauce depending on desired spice level.
  • Make sure to not overcook the noodles as they will bake further in the oven.
  • For a creamier texture, you can mix the ricotta with an egg before layering.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
