- Simmer Blueberries and Honey: In a small saucepan, combine 2 cups of blueberries with 2 tablespoons of honey and place over medium heat. Let the mixture simmer for about 10 minutes, stirring occasionally, until the blueberries have softened and started to break down.
- Mash and Thicken: Remove the saucepan from heat and mash the softened blueberries to your desired consistency using a fork or a masher. Stir in 2 tablespoons of chia seeds and 1 tablespoon of fresh lemon juice to the mixture.
- Cool to Thicken: Allow the jam to cool to room temperature. As it cools, the chia seeds will swell and the jam will thicken naturally. Once cooled, transfer the jam to a jar or airtight container and refrigerate.
