Description

This Bacon Cheddar Ranch Pasta Salad is a creamy, flavorful dish perfect for gatherings and potlucks. Featuring tender pasta, crispy bacon, sharp cheddar cheese, and a zesty ranch dressing, it offers a delightful combination of textures and tastes. Optional additions like grilled chicken and fresh vegetables make it customizable to your preference.

Ingredients

Scale

Pasta

  • 8 oz short pasta (rotini or elbow macaroni)

Dressing & Dairy

  • 1 cup sour cream (or substitute Greek yogurt for a lighter dish)
  • 1 cup ranch dressing (homemade or store-bought)
  • 1 cup cheddar cheese, grated (pepper jack cheese can be used for a spicier option)

Protein

  • 6 slices bacon, cooked until crispy
  • 1 cup grilled chicken (optional, for added protein)

Vegetables & Garnish

  • 1/2 cup green onions, chopped (chives can be substituted)
  • 1 cup cherry tomatoes, halved (optional)
  • 1 cup bell peppers, diced

Instructions

  1. Cook Pasta: Boil salted water in a large pot and add the pasta. Cook until al dente, about 8-10 minutes. Drain and allow to cool slightly to prevent wilting of other ingredients.
  2. Bake Bacon: Preheat your oven to 400°F. Lay the bacon slices on a baking sheet and bake for approximately 25 minutes until crispy. Once done, chop the bacon into bite-sized pieces and set aside.
  3. Prepare Dressing: In a mixing bowl, combine the sour cream and ranch dressing. Whisk thoroughly until the mixture is smooth and well blended.
  4. Toss Pasta Mixture: In a large bowl, combine the cooled pasta with green onions, grated cheddar cheese, and half of the chopped bacon. If using, add cherry tomatoes, bell peppers, and grilled chicken for extra flavor and texture.
  5. Add Dressing: Pour the ranch dressing mixture over the pasta and vegetables. Toss everything together until the pasta is fully coated with the dressing.
  6. Chill and Serve: For best flavor, refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Just before serving, sprinkle the remaining bacon pieces on top. Serve chilled or at room temperature as desired.

Notes

  • You can substitute Greek yogurt for sour cream to make the dish lighter and healthier.
  • Use pepper jack cheese instead of cheddar for a spicy kick.
  • Grilled chicken is optional but adds protein and makes it a more substantial meal.
  • Chilling the salad for at least 30 minutes enhances the flavor and texture.
  • Feel free to add or substitute your favorite fresh vegetables, like cucumbers or red onions.
  • Ensure pasta is cooled before mixing to prevent dressing from becoming watery.
