Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to get it sufficiently hot for baking the tart.
- Prepare the puff pastry: On a lightly floured surface, roll out the puff pastry sheet to about 1/8 inch thick. Transfer it gently to a greased tart pan, ensuring it covers the bottom and sides evenly.
- Make the custard filling: In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth. Crumble the goat cheese and fold it into the egg mixture, combining well.
- Assemble the tart: Arrange the fresh asparagus spears evenly over the puff pastry base in the tart pan. Pour the egg and goat cheese mixture over the asparagus, spreading it evenly.
- Bake the tart: Place the tart in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and the filling is set and slightly puffed.
- Cool and serve: Remove the tart from the oven and allow it to cool slightly before slicing. Optionally, garnish with fresh herbs before serving for added flavor and color.
