Description

A delicious and elegant asparagus and goat cheese tart featuring flaky puff pastry, tender asparagus spears, and a creamy custard filling with goat cheese and herbs. Perfect as a light lunch, brunch, or appetizer.

Ingredients

Scale

Base

  • 1 sheet store-bought puff pastry

Filling

  • 1 bunch fresh asparagus
  • 4 oz creamy goat cheese
  • 3 large eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to get it sufficiently hot for baking the tart.
  2. Prepare the puff pastry: On a lightly floured surface, roll out the puff pastry sheet to about 1/8 inch thick. Transfer it gently to a greased tart pan, ensuring it covers the bottom and sides evenly.
  3. Make the custard filling: In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth. Crumble the goat cheese and fold it into the egg mixture, combining well.
  4. Assemble the tart: Arrange the fresh asparagus spears evenly over the puff pastry base in the tart pan. Pour the egg and goat cheese mixture over the asparagus, spreading it evenly.
  5. Bake the tart: Place the tart in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and the filling is set and slightly puffed.
  6. Cool and serve: Remove the tart from the oven and allow it to cool slightly before slicing. Optionally, garnish with fresh herbs before serving for added flavor and color.

Notes

  • Make sure to trim the woody ends of the asparagus for the best texture.
  • Use fresh eggs and high-quality goat cheese for rich flavor.
  • Optional fresh herbs such as thyme, chives, or parsley complement the tart nicely.
  • For a crispier crust, prick the puff pastry lightly before assembling.
  • This tart can be served warm or at room temperature.
